There are many delicious Pakistani dishes that are beloved by locals and visitors alike. This recipe is for mutton, goat and lamb Karahi. They are both very similar meats, the only difference being their cooking times. In Pakistan, mutton is the preferred red meat, whereas lamb is more frequently cooked in the UK. As for other countries, I’m unsure about trends (please let me know if you have any input in the comments). It’s a good idea to cover both in one recipe.

Let’s make the mutton karahi (goat karahi)

Ingredients:

-Dahi (Yogurt) ½ Cup (room temperature) 

-Cream 2 tbs (room temperature)

-Pani (Water) ½ Cup or as required 

-Lehsan paste (Garlic paste) 1 tbs 

-Haldee powder (Turmeric powder) ¼ tsp

-Mutton mix boti ½ kg

-Tamatar (Tomatoes) chopped 2 medium

-Namak (Salt) ½ tsp or to taste

-Cooking oil ½ Cup

-Lal mirch powder (Red chili powder) 1 tsp or to taste

-Garam masala powder 1 tsp

-Hari mirch (Green chilies) chopped 2-3 

-Hara dhania (Fresh coriander) chopped 

-Adrak (Ginger) julienne 

-Hara dhania (Fresh coriander)

-Hari mirch (Green chilies) 

Method;

  1. Add yogurt (½ Cup) and cream( 2 tbs)  to a pot, whisk it well and set aside.
  1. Add water (½ Cup), and garlic paste (1 tbs) and mix it well in a wok
  2.   3)  Add turmeric powder (¼ tsp) to the same wok, and bring it to a boil

.  4) Add mutton mix boti ( ½ kg), tomatoes  ( chopped 2 medium), and salt (½ tsp or to taste)  in 

the same wok in which you just add turmeric powder and now mix well all this.

5)     During the first 8-10 minutes of cooking, cover and cook over medium-low flame for 15-20 minutes, then cook over high flame for 15-20 minutes.

6)      For 5 minutes, add cooking oil, mix continuously, and cook.

7)      Then add red chili powder and mix well.

8)      Cook until oil separates, then add the garam masala powder and mix well.

9)      On low flame, add yogurt+cream mixture, mix continuously, and cook for 3-4 minutes.

10)       Add green chillies, fresh coriander, and ginger, mix, and cook on low flame until oil separates.

  11)    Garnish with fresh coriander, ginger, and green chilli & serve.

Some  Tips;

  1. You can use a pressure cooker to make it quicker.
  2. If you are using lamb instead of mutton, then you have less cooking otherwise it will be a little dry which is not as flavorful as it should be.
  3. If you are using lamb then first cook it in a pressure cook for 30 minutes then use it in a place of mutton, the taste will be amazing and you will love it.
  4. Pro tip uses all the ingredients fresh like all the veggies and mutton.

Here are the some tips for making it a more fancy meal especially when guests are coming to your home then you must try this. Some serving tips

  1. Eat it with garam naans  (freshly cooked naans).
  2. Serve it with green chutney which is made by coriander,  green chillis, and mint. It will make it a good combination.
  3. If you are living outside Pakistan then I will recommend you to eat with homemade gol roti .
  4. You can also eat it with rice especially biryani (which is not too spicy).
  5. If you guys having dawat or a dinner at your place then you must serve it with a desserts like kheer, seviyan and halwa.
