Smoked Chocolate
Ingredients;
Chocolate chips: you can use the chocolate chips which recipe I tell you about above, and also can use the chocolate chips if you have them already available to you.
Pellets: For this recipe, you should use wood pellets that have a subtle, light flavour and smell, like apple, cherry, or hickory, or a flavour that goes well with chocolate and baked goods, such as maple or pecan.
Make sure to use pellets that are specifically designed for smoking and grilling, as these will produce the best results.
Smoke tube: you can use whatever is available to you.
Method;
- Open the lid of the smoke tube, and carefully place the desired type of pellets into the tube. Make sure to fill the tube with the pellets until it is nearly full, but not overflowing. Close the lid of the smoke tube securely to ensure the pellets do not spill out.
- Take your tube and place it on the lowest shelf of your oven/smoker. Ignite the pellets at the front using a lighter, and let them burn for a few minutes before extinguishing the flame. The embers will keep smouldering and produce smoke.
- Once the smoke has been created. Put your chocolate chips on the above rack of your oven/smoker. And then close the lid of the smoker or oven.
- Leave it or cold the smoke for one to two hours.
- Remove the chips from the smoker and place them on a cooling rack. Allow them to rest and cool for approximately 15 minutes before transferring them to an airtight container. Make sure the container is tightly sealed to keep the chips fresh and prevent them from drying out.
- Allow the chocolate chips to sit in the smoked environment for at least 5 days. During this time, the chocolate chips will absorb the smoke flavour and become infused with it, resulting in a much richer and more intense flavour than if you were to enjoy them immediately. After 5 days have passed, you can enjoy the chocolate chips, savouring the smoky flavour that has been imbued into them.
